Sometimes we could all use a quick and yummy meal to make during the week, but a lot of times we don’t have hours to waste cooking. I’ve put together this recipe for cheesy angel hair pasta that will be sure to please your family and save time!

Why I love this recipe: This recipe is super easy to make and it tastes very gourmet. But, in addition, I’ve given you 3 of my most favorite relaxation techniques that you actually use while you make this dish. So after you’ve made it, you’ll feel more relaxed because you’ll be more relaxed. and you’ll be eating pasta.

Cheesy Pasta

INGREDIENTS:

  • kosher salt
  • 1 lb. angel hair
  • 1 tbsp. unsalted butter
  • 1 c. half and half
  • 1 c. Grated Cheddar
  • 1 c. grated Gouda
  • 1 c. grated Swiss Cheese
  • 1/2 c. Pecorino
  • Freshly ground black pepper
  • 1/4 c. fresh chopped parsley

 

 

DIRECTIONS:

  1. Bring an 8 quart stock pot of water to a boil and generously season with salt. Cook pasta according to package directions. Drain. Reserve 1 cup pasta water. During this step, take a brief mental inventory of your body. Think about the sensations in your knees, neck, arms and body. What feels good and what feels off right now in this moment? Take 5 deep breaths (breathing in through your nose and out through your mouth.) Also do some simple stretches that target that part of your body. This promotes awareness of your whole body and recognizing what feels a bit off can build awareness and harmony to help you learn ways to prevent what’s wrong. This simple step is a huge stress buster.

 

2. In a large skillet over medium-high heat melt butter and combine with half and half. Bring to a low simmer, add all of the cheese and 1/2 tsp black pepper. Reduce to low heat and mix well until blended. This is cheese sauce heaven. During this step I want you to practice being present. This is vital to stress relieve and most of us are rarely present in the moment. Here’s your opportunity to practice it. In order to be present you must slow down. Use this step to only focus on the task at hand. Only think about making the cheese sauce and blending it together. By spending time doing this and focusing on your senses, you’ll feel less tense immediately.

 

  1. Drain pasta and gently fold in half the pasta using tongs to coat all strands. Add parsley and balance of pasta. If sauce is too thick add a spoonful of pasta water at a time until you reach desired consistency. Serve immediately with crusty baguette and dressed greens salad. Writing down what we are grateful for helps us to remember that our lives are bigger than our problems and we all have things that we should celebrate and be thankful for. All of us.
